A delicious and super simple cheat’s Easy Fish Pie recipe, using frozen food hacks for a easy midweek meal.

Using Iceland foods frozen saviours, delicious white cod, broccoli and cauliflower, this dish is packed with vegetables too.I feel like a bit of a cheat calling this a recipe. It is just about the easiest thing I’ve ever cooked for dinner. But you know, sometimes needs must right?

I’ve been working in London for a few days last week and this week. When I’m away, all I seem to crave is the comfort food of home (especially during these rain storms – err summer? HELLO?). However, the prospect of slaving over the oven when I’m travel tired and just want to see those little babies of mine.

This is always when my freezer comes to the rescue. It’s the ultimate busy Mum food lifesaver. I keep it stocked with a variety of bits and bobs that let me whip up something that looks like I’ve spent hours on it – when in reality? It’s all about the cheat.

Iceland got in touch with me recently and asked me for a food waste avoiding recipe of mine as part of their #PowerofFrozen campaign. Did you know that UK households waste 7m tonnes of food – worth £700 per family – every year? Iceland are passionate about reducing food waste both in store and at home by helping us all to utilise the power of our freezers more. Which when I’m busy and tired, I can particularly get behind.

As you know, I do love a meal plan, which is a great way of helping to reduce food waste at home. Being sure to use food in date order and cooking food in bulk also helps reduce food waste as the remainder of the recipe that is not used can be frozen and eaten at a later date.

This recipe uses all frozen ingredients, available from Iceland, so if you don’t use everything (there will be one cod fillet left in this recipe for example) it’s safely stashed away for another day – no waste.

This is a great way of mixing up your freezer cooking, as sometimes I do tend to over cook and we eat a batch of bolognese for 3 weeks!

I hope you enjoy the recipe, it really is so simple. I’ve left the spinach as optional as I know not all children will eat it, it also makes the sauce a little less thick. I like it though, as it sneaks in another portion of vegetables.

Easiest Ever Fish Pie
 
Ingredients
  • 1 Bag of Iceland Broccoli and Cauliflower Cheese (frozen)
  • 3 Iceland Cod Fillets (frozen)
  • 1 Bag of Iceland Crispy Potato Slices (frozen)
  • A handful of frozen spinach (optional)
  • Parsley to garnish
Instructions
  1. Pre-heat the oven to 180C.
  2. In an oven proof dish, sprinkle half of the broccoli and cauliflower cheese mix.
  3. Top with the frozen Iceland cod fillets.
  4. Top with the remaining broccoli and cauliflower cheese mix.
  5. Top with the bag of crispy potato slices.
  6. Bake in the oven for about 35 minutes or until crispy and golden.
