Using a weekly Meal Plan takes the drama out of midweek dinners. Stay balanced, save money and save your sanity!
This is the eighth weekly meal plan I will be sharing on Instagram, Facebook and TikTok, and so many of you asked for all of the info in one place, so here it is. Watch out for the videos of each recipe coming each night this week, so you can cook along.
For reference, I shopped for this Meal Plan in June 2022 at Aldi and it cost £29.71.

Monday:
One Pan Tomato Pasta

Served sprinkled with your Grana Pandano (this is very similar to Parmesan but cheaper).
This recipe uses 200g of cherry tomatoes but you will have extra left, as you have 660g total for the week and only need 200g for this and 300g from the Chicken Pesto. Add more to this if you’d like to up the veg quota!
Tuesday:
Sticky Beef Bowls

Serve with boiled rice.
In the shopping list I’ve put a cheaper mince option (10% fat) I prefer to use a lower fat mince, like 5% but it is up to you and what your budget will allow.
I planned to add peas to this! If you have any, feel free to add 200g to the mince as it cooks.
Wednesday
One Pan Chicken Pesto

I used Aldi chicken “sizzler” fillets here as they were in a 500g pack. You could obviously use more or less chicken according to your appetites and budget.
I used fresh green beans for these two recipes, you could replace with frozen which are cheaper, but I find they don’t cook very well in the oven when from frozen.
Thursday
Crispy Pork Stir Fry

I garnished with the tops of the spring onions where the rest are used in the Salmon Bake recipe (if you don’t have peanuts).
Friday

The recipe uses 165g of cream cheese but the Aldi pots come in 200g so I used the whole pot, up to you if you use it all of save some for another day.
I like to serve this with a little lemon sauce, made by mixing 75g of mayonnaise with 75g Greek yoghurt, the zest and juice of one of the lemons and 1tsp honey.
Leftovers of this make a great lunch dish.
