Welcome to my Easter Rocky Road. This is super simple baking and a perfect way to get the kids creative in the kitchen. It’s not just fun to make though. What awaits is a mouthwatering treat filled with crunch, gooeyness and layers of chocolate.
At Easter we have ALL the excuses to have chocolate upon chocolate. And that’s exactly what this Easter Rocky Road is.
Get every mini chocolate egg you can find and throw it in. Melt everything together with butter and gold syrup, press even more eggs in, along with some biscuit and marshmallow for loads of texture, then set overnight in the fridge.
Simply divine.

Easter Rocky Road Ingredients
- Unsalted butter – Salted is fine if it’s all you have, but obviously it can give a slight savoury tang.
- Milk chocolate – Callebaut is the brand I always use and recommend, you can find it HERE.
- Golden syrup
- Mixed mini eggs
- Mini marshmallows
- Oreos
- Small chocolate eggs – Such as Creme Eggs, Malteser eggs, Galaxy eggs etc, foil removed!
How to make Easter Rocky Road
1. Melt the milk chocolate, butter and golden syrup as per the recipe below. Once smooth, stir in the broken up Oreos, marshmallows and chocolate eggs.
2. Mix together well and smooth into a lined baking tin. Pour over more melted chocolate and embed in more chopped up eggs to decorate. Set in the fridge overnight until set.
How to store Easter Egg Rocky Road
Once this has set, it’s fine to keep at room temperature, unless it’s a warm day and then it would be much better in the fridge.
Top tips
Best chocolate to use
I use my favourite Callebaut chocolate for this recipe. This chocolate is just amazing. It melts so well and really makes a difference to any recipe.
When you buy it in bulk (1kg bags at a time) from Amazon it works out to about the same price as supermarket chocolate. A good investment I think as it really does make SUCH a difference. You can then use it again for other bakes.
Type of baking tin
I usually use a tin like this for my rocky roads or tray bakes. It measures 20cm x 20cm and gets the best thickness. You can use another size or shape but just be aware your squares might be thinner or thicker.
Line the tin!
Make sure you do this so you can get the rocky road out quicker and without breaking it. I use baking parchment or baking paper for almost everything I bake. No sticking, ever.
I buy it in bulk from Amazon so I don’t run out, and it works out cheaper. Be careful not to confuse it with greaseproof paper, which isn’t suitable for no-bake cakes.
How to melt the chocolate
I find the easiest and quickest way is to use the microwave, but do this carefully as it can burn (no longer than 30 second bursts, stirring in between).
You can also bubble up some water in a pan and place a heatproof bowl over it with the chocolate inside (make sure the water isn’t touching the bottom). This takes a little longer but the chocolate melts nice and evenly.
FAQ
I mean, there’s very little chance of you having this problem! But just in case, it should be fine for up to a week. After that the marshmallows tend to get very sticky and wet where they’ve been cut (so I’ve heard).
Once you’ve taken it out of the fridge, allow it to cool to room temperature for 30 minutes before trying to chop it up.

Ingredients
- 150 g Unsalted butter
- 400 g Milk chocolate Chopped
- 4 tbsp Golden syrup
- 180 g Mixed Mini Chocolate Eggs
- 80 g Mini Eggs
- 150 g Oreos Broken
- 180 g Mini marshmallows
To decorate
- 150 g Milk chocolate Melted
- More eggs/Easter chocolates to decorate
Instructions
- Melt the milk chocolate, butter and golden syrup in a bowl in the microwave, stirring every 30 seconds. (Or melt over a pan of hot water.)
- Once smooth, stir in the broken up Oreos, marshmallows and chocolate eggs.
- Mix together well and smooth into a lined baking tin.
- Pour over more melted chocolate and embed in more chopped up eggs to decorate. Set in the fridge overnight until set.
