Ever since I published my viral Tuscan-style creamy Marry Me Chicken recipe, I knew these flavours would work perfectly as a one pot pasta too.
The combination of chicken, cream, sun dried tomatoes and parmesan are dreamy – sort of tastes like a bit of a special dish but still totally quick and easy enough to make midweek!

I explain more in my original Marry Me Chicken recipe here about how this dish came about, and this recipe is a new take on that favourite.
After playing around with this recipe already to create my Marry Me Chicken Orzo, I also wanted another easy recipe that was made with regular pasta, as the quantities and methods are different.

Marry Me Chicken Pasta Ingredients Notes
- Chicken – We’re using 650g of skinless and boneless breasts for this recipe, which is about 4 breasts, cut into bite-sized chunks
- Pasta – I used ‘spirali’ in these photos, but any sturdy pasta shape that isn’t too fine will work. (If it’s too thin or narrow it will become mushy as you stir.)
- Oil – Use olive oil, or use the oil from the sun dried tomatoes jar
- Garlic – I use peeled and crushed fresh garlic here, but feel free to use pre-prepared from a jar or pack
- Sun dried tomatoes – The type in an oil-filled jar, not the very dry ones
- Herbs – Dried oregano and paprika from the spice rack
- Chicken stock – Made from a cube is fine
- Cream – Double cream for flavour and texture
- Parmesan – Grated yourself or pre-grated is fine. Grana Padano is a good, slightly cheaper alternative to Parmesan if you prefer
- Spinach – Use baby spinach here as it’s more tender and melts into the sauce
How to make Marry Me Chicken Pasta
1. Fry chunks of chicken breast in a large pan in hot oil until coloured.
2. Reduce the heat and add garlic, sun dried tomatoes, oregano and paprika for another few minutes as per the recipe below.
3. Add the pasta and stock and stir well. Cook with the lid on as per the recipe below.
4. Turn the heat right down, then add the spinach and cream. When stirred through, add parmesan and season well.
Substitutions
- Vegetarian – You could use a meat alternative for the chicken and swap the stock for vegetable stock
Leftovers & Reheating
In the fridge You can keep this recipe in the fridge for 3 days. Reheat fully before serving.
If you don’t serve this as soon as it’s cooked, you’ll find that the sauce absorbs into the pasta and there’s not a lot left. It won’t affect the taste, you may just want to add a splash more stock when you warm it through.
Can you freeze this pasta dish? I’m not a big fan of freezing pasta as it can go quite mushy when defrosted and reheated.
All that said, there’s nothing wrong with freezing for lunch if you have leftovers, it’s just not quite as good as fresh or reheated from the fridge.
Cooking Time Tip
The cooking time for One Pot Pastas can vary a lot, depending on the heat and the pasta shape. Just keep an eye on it as it cooks and allow to cook for longer if needed. If you do need to cook for longer, you may need to add a splash or two of more boiling water.

Any sturdy shape as a very thin pasta shape can break up in one pot pastas as they are stirred. Bear in mind they may vary the cooking time, so just be sure to check it’s cooked through before serving.
I became aware of it to start with on Pinterest and Tik Tok. I looked at lots of online recipes and discovered that this chicken-in-a-vaguely-Italian-style-cream-sauce was coined by American food publication Delish, because it was even better than Ina Garten’s much-loved ‘Engagement Roast Chicken’ recipe (who is a national foodie treasure in the US) – according to Today.
I decided to have a go at it, but with my own tweaks that I thought it needed, while keeping the main ingredients in common with the original: chicken, cream, sun dried tomatoes and parmesan.
While I love the chicken recipe on its own, the flavours are so adaptable, which is why making this a super family friendly all-in-one meal is so achievable.

Marry Me Chicken Pasta {One Pot Recipe}
Ingredients
- 650 g Boneless & skinless chicken breast About 4 breasts, cut into bite-sized pieces
- 1 tbsp Olive oil See notes
- 3 Garlic cloves Peeled and crushed
- 170 g Sun dried tomatoes Drained
- 1 tsp Oregano
- 2 tsp Paprika
- 250 g Dried pasta See notes
- 650 ml Chicken stock See notes
- 150 ml Double cream
- 50 g Parmesan Grated
- 120 g Spinach
- Freshly ground black pepper
Instructions
- In a large, deep frying pan, heat the oil over a medium heat. When it's hot, carefully add the chicken pieces and a good sprinkling of pepper. Cook for 5 minutes stirring occasionally until all sides are starting to colour.
- Reduce the heat and add the garlic, sun dried tomatoes, oregano and paprika. Stir for 3-5 minutes until the garlic is softened.
- Add the pasta and stock and give everything a good stir and put the lid on. Cook for 15-20 minutes, stirring occasionally, until the pasta is cooked and most of the liquid has been absorbed.
- Turn the heat to the lowest setting add the spinach and cream and stir very well for 1-3 minutes until the spinach is wilted and the cream is heated through. Check the chicken is cooked through and add more salt and pepper if needed.
- Turn off the heat and stir in the parmesan.
