I just had to make a Slow Cooker Marry Me Chicken version of this family favourite for those days when time is a struggle and we can benefit from prepping earlier in the day.

How we came up with this recipe
You may already be familiar with this Tuscan-style creamy dish from my other variations on Marry Me Chicken, but in case you don’t know…
I adapted my own version of this dish a while ago (so good it’ll make your diners want to marry you, as the story goes).
I thought it would lend itself perfectly to my slow cooker collection, and after plenty of testing, I was right!
Unlike my pasta dishes, this one will probably need a side dish to go with it. There are a few ideas below, or keep things simple with some microwave rice just before serving.
Slow Cooker Marry Me Chicken Ingredients Notes
- Chicken – We’re using 650g of skinless and boneless breasts for this recipe, which is about 4 breasts, cut into bite-sized chunks
- Sun dried tomatoes – The type in an oil-filled jar, not the dry ones
- Garlic – I use peeled and crushed fresh garlic here, but feel free to use pre-prepared from a jar or frozen
- Chicken stock cube – Just add this to the slow cooker with the water measured, no need to dilute further
- To stir in once cooked – Cream cheese, grated parmesan, fresh basil, sea salt and ground black pepper
How to make Slow Cooker MArry Me Chicken
1. Toss the chicken in the plain flour with plenty of salt and pepper until it’s well coated. Put in to the slow cooker.
2. Add the garlic, sun dried tomatoes, oregano, paprika, stock cube and boiling water. Cook as per the recipe below.

In the fridge You can keep this recipe cooked in the fridge for 3 days. Reheat fully in the microwave or on the hob before serving.
In the freezer Creamy sauces don’t freeze overly well and the chicken would be a little dry when you’re reheating it from frozen, however I wouldn’t let it go to waste. If freezing is your best option, you can do so, it may need a little extra liquid (water) to be added as you reheat it.

Slow Cooker Marry Me Chicken
Ingredients
- 650 g Boneless & skinless chicken breast About x4, cut into bite sized pieces
- 30 g Plain flour
- 3 Garlic cloves Peeled and crushed
- 100 g Sun dried tomatoes Drained and very finely chopped
- 1 tsp Dried oregano
- 2 tsp Paprika
- 300 ml Boiling water
- 1 Chicken stock cube Crumbled
Stir in at the end:
- 100 g Cream cheese
- 50 g Parmesan Grated
- 15 g Fresh basil leaves
- Sea salt and freshly ground black pepper
Instructions
- Toss chicken in the plain flour with plenty of salt and pepper until well coated.
- Put into the slow cooker with the garlic, tomatoes, oregano, paprika, crumbled stock cube and water.
- Cook on HIGH for 2.5-3 hours until the chicken is cooked through.
- Mix in the remaining ingredients just before serving.
