Why Cajun Chicken?
My recent culinary trip to New Orleans taught me a thing or two about Cajun cooking, and that the 3 vegetables of green peppers, onion and celery are the ‘holy trinity’ of most dishes’ base, as well as that unmistakable Cajun spice blend.
I love my Cajun Chicken Pasta recipe and wanted to adapt it a little into a speedy air fryer recipe that also included some tender chicken, where the prep was quick but the results were mouthwatering.
This is what our convenient air fryers are for… stick it all in, enjoy the delicious results 25 minutes later!
This dish is one that can be dressed up or down with various sides if you want to too, making it great for an easy lunch or no fuss dinner.
Air Fryer Cajun Chicken Ingredients Notes
- Chicken breasts – About 4 chicken breasts, diced up into bite-sized pieces
- Cajun spice mix – Use whichever brand you prefer but note that the spice level may vary greatly!
- Veggies – Green peppers, celery and onion, but you can swap in whatever you prefer
How to make Air Fryer Cajun Chicken Traybake
- Put all of your ingredients into the air fryer, stir to coat, and cook as per the recipe below.
- Shake vigorously halfway through cooking.
- (As the traybake cooks you may be left with some liquid at the bottom of the pan – spoon over or discard).
Substitutions
- Vegetarian option – You can swap the chicken for a vegetarian/vegan protein too, but adjust your cook times as required
- Chicken thighs – You can use thighs instead of breast if you prefer, but bear in mind they will take a little longer to cook. Cut them small and adjust the cooking time to until they’re cooked through
- Vegetables – Feel free to add any others of your choice
Leftovers
In the fridge You can keep this recipe in the fridge for 3 days. Reheat fully before serving or eat cold.
In the freezer This is fine to freeze. Wait until cooled then portion up and freeze. Defrost thoroughly before reheating.

No air fryer, no problem…
You can cook this in the oven instead at 180C for the same amount of time.
Type of Cajun spice
I use any of the regular supermarket mixes (the type in a jar rather than a sachet).
They will vary A LOT in how strong they taste, so if you’re concerned about this being too spicy, use half the amount and add more later if needed.

I’ve tested 3 air fryers now, and while I’m not saying that this one is THE BEST EVER, I’m really happy with it. It’s easy to fit in the dishwasher, not too expensive and has a basket large enough for 4 people.
Yes! When it’s cool, pack it into fridge containers and store for up to 3 days. Reheat until piping hot throughout in the microwave (or eat cold).
You can also freeze this. Defrost it thoroughly first and then reheat.
Yes you can. They will take a little longer to cook so cut them small and adjust the cooking time. Be sure to always check that meat is cooked through before serving.
Yes, I just remove the base on mine for this as I like the cooking juices.
If you can’t remove it from your air fryer, no worries. It will just be a little less ‘juicy’. OR put the ingredients into an air fryer-proof cooking tray or liner to cook.
Cajun seasoning is made up of a blend of spices from a cuisine that originates from Louisiana, with roots in French Canadian cooking.
While there’s no definitive list of ingredients and it can vary, it usually incorporates onion, paprika, pepper, salt and often cayenne, turmeric, oregano and thyme.
To keep things simple, we’re using the shop-bought blend though!

Air Fryer Cajun Chicken Traybake
Ingredients
- 650 g Chicken breast Diced | Approx 4 breasts
- 2 tsp Cajun spice mix See notes
- 2 Green peppers Deseeded and cut into 2cm cubes
- 4 Celery sticks Cut into small chunks
- 1 Brown onion Peeled and cut into 2cm cubes
- 1 tbsp Sunflower oil
Instructions
- Put all of your ingredients into the air fryer, stir to coat, and cook on 200C for 20 – 25 mins or until the chicken is cooked through.
- Shake vigorously halfway through cooking.
- (As the traybake cooks you may be left with some liquid at the bottom of the pan – spoon over or discard).
