Keeping everyone fed and happy in the school summer holidays is no easy feat.
With everyone hot, bothered, hungry and (sometimes!) bored, juggling what to make for dinner every evening along with everything else can be a headache.
That is why my brand new Summer Family Meal Plan series is here, bringing you FOUR weeks of 15 minute meals (and under).
They’re all simple, budget friendly and delicious, freeing you up to get on with summer without spending hours in the kitchen. We’ve done the thinking so you don’t have to.
For reference, I shopped for this Meal Plan in June 2024 at Aldi and it cost £32.31
Why use a meal plan?
Knowing exactly what food to buy for avoids food waste, saving you money.
Having a plan for dinner each night avoids the mental load of “what’s for dinner?” questions every night.

Some tips:
Check for any items on the shopping list that you already have in your cupboard.
There are no side dishes in this meal plan to keep things quick and simple, but you can add anything you like, remembering to add them to your shopping list!
Remove ingredients for any meals that you don’t want to cook.
The shopping list includes the cheapest version of each ingredient. Obviously if you want to buy lower fat mince or free range etc, that’s personal choice.
Please note that there is a section in the shopping list titled ‘store cupboard‘. These are not in the main list but if you don’t have these ingredients already, you’ll need to add them on to your shop.
Recipes for 15 Minute Meals (Or Less):
Dinner 1
We’ve added an iceberg lettuce and large pack of cherry tomatoes to the shopping list. These are to be shared between the halloumi wraps and beef tacos (dinner 4).
Halloumi Wraps {with Sticky Sauce}
Dinner 2
This recipe calls for cooked chicken. It’s better value to buy uncooked chicken, so this is what we added to the shopping list, (you’ll obviously need to cook it! You can do this in your air fryer, or oven, in the time it takes to make the rest of the salad if you wish) but it’s up to you what you go for.
Unfortunately, Aldi doesn’t sell farfalle, so we’ve added penne to the shopping list. But again, please use whichever shape you prefer!
Chicken Pasta Salad {15 Minute Meal}
Dinner 3
We’ve gone for Aldi’s regular bagels, but choose your favourite for this.
Best Ever Tuna Melt {10 Minute Meal}

We’ve added an iceberg lettuce and large pack of cherry tomatoes to the shopping list these are to be shared between with this recipe and halloumi wraps (dinner 1).
We bought 25% beef mince because it’s better value, however buy what you prefer.
Easy Beef Tacos {15 Minute Meal}

We used a red onion from the shopping list for this recipe instead of white.
