This is the second weekly instalment of our 4 week Summer Family Meal Plan series. This meal plan is designed to answer that age-old question of ‘what’s for dinner’, making it your new best friend during the midweek summer holidays.
We know all too well what figuring out what to make for dinner every night during the summer holidays is like!
That’s why we wanted to create this Summer Family Meal Plan series for you.
Not only have we done the thinking so you don’t have to, we’re only featuring recipes that are ALL 15 minute meals or UNDER, healthy and delicious.
This is the second meal plan in this 4 week series. You can find the first meal plan here.
For reference, I shopped for this Meal Plan in June 2024 at Aldi and it cost £36.21
Why use a meal plan?
Knowing exactly what food to buy for avoids food waste, saving you money.
Having a plan for dinner each night avoids the mental load of “what’s for dinner?” questions every night.

Some tips:
Check for any items on the shopping list that you already have in your cupboard.
There are no side dishes in this meal plan to keep things quick and simple, but you can add anything you like, remembering to add them to your shopping list!
Remove ingredients for any meals that you don’t want to cook.
The shopping list includes the cheapest version of each ingredient. Obviously if you want to buy lower fat mince or free range etc, that’s personal choice.
Please note that there is a section in the shopping list titled ‘store cupboard‘. These are not in the main list but if you don’t have these ingredients already, you’ll need to add them on to your shop.
Recipes for 15 Minute Meals (Or Less)
Dinner 1
We’ve used red onion in all recipes, including this one, however the original recipe uses white onion. This is so we only had to buy one bag of onions. Just use whatever you have or prefer.
Philly Cheesesteak {15 Minute Meal}
Dinner 2
We’ve used vegetable gyoza for this recipe but you can choose a meat option instead if you prefer.
Gyoza Soup {15 Minute Meal}
Dinner 3
This recipe uses cooked chicken breast for speed but we’ve added uncooked to the shopping list as it is better value for money. You can use either – or even leftover chicken from another day – it’s up to you. (Obviously you’ll need to cook them if you buy raw chicken! You can do this in the air fryer or oven.)
Chicken Wraps {15 Minute Meal}
Dinner 4
We’ve added 2 packs of halloumi to the shopping list for this recipe, but you can just use 1 if you prefer.
Halloumi Pasta {15 Minute Meal}
Dinner 5
We’ve added 2 full-sized balls of mozzarella to the shopping list as this is the equivalent weight of mini mozzarella balls used in the recipe.
Aldi doesn’t sell cooked crispy bacon so we’ve added streaky bacon to the list for you to cook if you would like (and there is plenty left for breakfast!)
Pesto Pasta Salad {15 Minute Meal}
