I love a midweek stir fry because they’re quick, healthy and tasty, but this Peanut Butter Noodles with Halloumi recipe takes it to a whole new level! It’s a delicious veggie dish too.

If you haven’t added halloumi to any of your meals yet, please give this one a try – you will immediately realise what you’re missing! It’s the perfect cheese to cook with as a chicken or beef alternative as it’s so meaty and salty (and yes, a little bit squeaky too!)

This Peanut Butter Noodles with Halloumi recipe replicates a satay-style stir fry with a nod to the the flavours and style of Thailand or Indonesia, with easy to get hold of ingredients. It’s a quick win with peanut butter as the main sauce element.

The peanut butter I’ve used here costs 89p from Aldi and it featured in my budget Midweek Meal Plan, but use whichever brand or texture you prefer (I’ve used smooth but you could try crunchy). You can also mix up the vegetables to your taste too – or whichever ones the kids will eat!

You’ll love this recipe because:

How many people does this serve?

Easily four adults. You could add more noodles or extra veg if you’d like more for leftovers for lunch the next day.

Could the peanut butter be swapped for a nut-free alternative?

I haven’t tried and tested these, but you could try tahini, sweet chilli sauce or teriyaki.

Can I swap the halloumi for meat?

Definitely! Chicken satay sauce is so delicious, and this would be very similar. Just make sure you cook the meat through before adding.

Can you really make peanut sauce from peanut butter?

It’s obviously not totally authentic satay, but peanut butter is a great ingredient because it melts into a sauce when heated up, is tasty and healthy too. There are so many ways you can use peanut butter.

Peanut Butter Noodles with Halloumi {Satay-Style Stir Fry}

This Sticky Halloumi Peanut Butter Noodle recipe is quick, full of flavour and budget-friendly. Everything you need a quick and healthy stir fry!

Ingredients

  • 2 tsp Olive oil
  • 1 Large onion Sliced
  • 4 Peppers Sliced
  • 450 g Halloumi See notes
  • 250 g Egg noodles
  • 2 Spring onions
  • 50 g Salted peanuts To garnish

For the sauce

  • 125 g Peanut butter
  • 6 tbsp Soy sauce
  • 3 tbsp Sweet chilli sauce
  • 1 tsp Garlic puree
  • 2 tbsp Honey
  • Enough boiling water to make a smooth sauce

Instructions

  • Heat half of the oil in a pan and pan fry the onions and peppers.
  • Set aside. Heat the rest of the oil and pan-fry the halloumi until crisp.
  • While it’s frying, cook the noodles according to the pack instructions.
  • Mix the sauce ingredients and whisk until smooth.
  • Combine everything together and stir really well.
  • Sprinkle with spring onions and peanuts to serve.

Money Saving
You could reduce the costs of this meal further by using more vegetables and only one pack of halloumi.
