My aim was to come up with an easy, delicious but wow-factor dessert that everyone can whip up quickly and serve at their street parties, garden parties, picnics or Bank Holiday gatherings, without having to do mountains of prep or baking.

TOP TIPS FOR MAKING THE LEMON CHEESECAKE TART
Lemon curd is a great shortcut to get that amazing sweet, zesty flavour without needing to add extra sugar.
If you don’t like or can’t get hold of raspberries, you could use strawberries for the red part of the Union Jack.
The amount of berries you’ll need will depend on the surface area of your cheesecake, so make sure you have enough if your dish is wider!
FAQs ABOUT THE LEMON CHEESECAKE
Should my tart set?
This isn’t a super firm tart as we are using some shortcuts here, but as long as you’re careful to serve it straight from the fridge, it should be firm enough to slice and lift out.
If you really want it to be firmer, you can freeze the base alone for an hour before you finish it off.
What tin should I use to make this tart?
I used a 24cm loose bottom tart tin. This means that you can easily push the tart out of the tin from the bottom when it is set. (Stand the thin on a can of baked beans, push down and the sides will come away.) Also, extra lazy trick, don’t bother to remove the bottom of the tin, just sit it on top of a plate.
What if I don’t have a flan tin?
You can use any round type of Pyrex-style dish, which you would serve the tart straight out of. Not having to remove the tart from a tin is easier BUT trickier to slice and serve. Who doesn’t love a big spoonful dolloped on a plate and ready to go though?!

Queen’s Platinum Jubilee Easy Lemon Tart
Ingredients
- 300 g Ginger nut biscuits
- 100 g Butter Melted
- 300 ml Double cream
- 165 g Cream cheese
- 150 g Lemon curd
- 175 g Raspberries See notes
- 280 g Blueberries
Instructions
- Crush the ginger nuts until they are sandy and add the melted butter. Mix well.
- Press into the flan case until the bottom and the sides are firmly packed down. Using the bottom of a glass is helpful.
- If you have time, chill for 30 minutes.
- Beat the double cream, cream cheese and lemon curd until it is very stiff and thick. Add to the tart base and smooth out.
- Add your berries in your Union Jack pattern and chill for at least 4 hours. Keep it in the fridge until you are ready to eat it!
Notes
You may need to add more or fewer berries depending on their size!
